Shahi tukda made with coconut 🥥 Rabdi!!

This decadent dessert is by far my fav Indian dessert and also so coz it’s really easy to put together and tastes like heaven!

Quarters of bread slices fried in ghee, dipped in chaashni that’s sugar syrup flavoured with a lil bit of elaichi powder and topped generously with dollops of Rabdi and sprinkled with crushed pistachios. And there u have it- sheer bliss!

Shahi tukda is traditionally made with plain Rabdi but I being a big coconut lover, use coconut Rabdi
You can make your Rabdi at home but I prefer to buy plain Rabdi from my fav local sweet shop to save time n effort n just mix some roasted desdicated fresh coconut in it n that’s it!

Try this variation of the shahi tukda n you will fall in love!

Honey chilli 🌶️ potato!

When u feel like carbs just do it once in a while coz may be your body needs it ! It’s our happy food and we deserve it!

In this sweet and spicy a lil bit garlicky recipe, the potatoes are fried and tossed in the traditional Chinese style mix of hot sauces like soy sauce, chill sauce and tomato sauce in lots of finely Chopped garlic with sesame oil and sweetened with a lil bit of honey! Just a pinch for salt to balance the flavours!
Garnished with spring onions!

Veg gelouti kebab with lachcha paratha!

Gilouti means totally melted and true to its name it just melts in the mouth!
These are made of mushy kidney beans, yam and a veggie ridge guard or torai.
Flavoured with beautiful aromatics like rose petals, fried onion, ginger, garlic, garam masala, ghee roasted cashew nuts and fresh cream

Cooked in ghee to get a crusty outside and served over lachcha paratha with the 3 dips - curd, cilantro and tamarind, it’s a delight in every bite!

U can serve it with any paratha of your choice or even have it just with dips!

It basically originated in Lakhnow in north India but is such a popular dish all across the county! Truely a taste of the food cultural unity of our country!So I dedicate this our 77th Independence Day as a symbol of solidarity!

A simple Roasted Beetroot n Feta salad!

Growing up I never liked Beetroot but I guess u just have to cook it right and it can become your fav veggie!

Roasting beets is I feel brings out its sweetness and makes it taste the best!

Just smear whole Beetroots with olive oil and place it in covered ramakins and roast them in the oven at 425 degrees for 40-50 min amd you get these gorgeous juicy sweetness.

Let them cool down then slice them and spread them on a plate folded ( folding it makes it easy to fork)
Top them with feta crumbles u can use vegan feta as per your preference
A few cilantro
With lots of walnuts and sunflower seeds
And Drizzle this generously with a simple vinaigrette

For the vinaigrette dressing-
3:1 olive oil to balsamic vinegar
1/2 tsp Dijon mustard
1-2 kernels of medium sized roasted minced garlic ( I roast the garlic along with the Beetroot)
1/2 tbsps of honey 🍯
Salt, pepper chilli flakes and dried mixed herbs
Whisk together to emulsify

Enjoy this vibrant plate of healthy deliciousness!

Hot & sour soup! A spicy -tangy, flavourful indo-

Hot & sour soup!

A spicy -tangy, flavourful indo-Chinese dish that’s so heartwarming!
For me this soup is a full meal with lots of veggies that satisfies all my spicy food cravings!

U need-
2 tbsp Oil of your choice
2-3 cloves finely chopped Garlic
1 inch finely chopped Ginger
1/4th medium sized Cabbage finely chopped
7-8 French Beans finely chopped
1 medium Carrot – peeled & finely chopped
1 Green Chilli – finely chopped
2 cups of vegetable stock or Water
2 tbsp Coriander Stems – chopped
2 tbsp Soya Sauce
2 tsp Red Chilli Sauce
1 tbsp of tomato sauce to balance the sour
1 tbsp Vinegar

For Corn-starch Slurry
2 tbsp Corn-starch
1 tsp Black Pepper Powder
Water
Mix everything together till no lumps are left

For Garnish
½ tsp Chilli Oil
Fresh Coriander

In a pot add the oil along with ginger and garlic and sauté for a minute or two
Add all the other chopped veggies along with the green chillies and sauté further for another minute or two
The veggies should be still crunchy
Then add the vegetable stock or water and the coriander stems and bring it to a boil
Then add all the sauces and the vinegar
Turn down the heat and add the corn starchy slurry mixed with the black pepper and mix well till it’s got a semi thick soup consistency (adjust with more slurry or water)
Garnish and serve hot!

So heartwarming on a cold evening or a rainy day like today!

Avo and feta salad!

Simple and so refreshingly yummy!

The star here is the garlicky balsamic dressing!

Just some crunchy shredded iceberg lettuce with some thinly sliced red bell peppers and tangy pickled onions with a quarter of the creamy avocado 🥑
Topped with pieces of feta cheese!

For the salad dressing-
3:1 olive oil to balsamic vinegar
1/2 tsp Dijon mustard
1-2 kernels of medium sized roasted minced garlic
Finely chopped half a small onion
1/2 tbsps of honey 🍯
Salt, pepper chilli flakes and dried mixed herbs

Whisk together to get a vinaigrette and pour generously over your salad!

You can also sprinkle sone seeds like black cumin or toasted sesame or some nuts like roasted walnuts etc over this one!

Did in and enjoy the delicious crunch and the creaminess! I could eat this everyday of my life!

Frankie roll is definitely my favourite comfort food!

It’s a delicious crispy tangy wrap that’s is one of the most famous street foods in India!

I make it with left over rotis but u can go ahead and make fresh whole wheat rotis!

The key ingredient here is Frankie masala which you can make at home with -
Kashmiri red chilli powder 3 tbsp
Tumeric powder 1 tsp
Coriander powder 2 tbsp
Dry mango powder or Aamchur 3 tbsp
Cumin powder 1 tbsp
Garam masala 2 tsp
Black pepper 1/2 tsp
Black salt 1.5 tbs
Salt 1 tsp

Soak some chopped green chillies or Serrano pepper in some vinegar and set aside!

You will also need some coriander chutney for this recipe.

Let’s make the potato filling- 2 tsp oil
1 finely chopped onion
1/2 tbsp Ginger garlic paste
1/2 cup tomato purée
2 potatoes (boiled, peeled and mashed)
1 tsp kashmiri chili powder
1/2 tsp turmeric
1 tsp roasted cumin powder
1 tbsp Frankie masala
1 tsp tomato ketchup
1 tsp any red chilli sauce
salt to taste

I sauté chopped onion, garlic and ginger till they are well cooked.
Add some tomato purée all the spices- red chilli powder, turmeric, roasted cumin powder and the most imp ingredient the Frankie masala.
Add in a lil water and let the spices release their aroma.
Then add in boiled mashed potatoes! Add a lil tomato sauce and the red chilli sauce.
Mix it all together to form a thick paste like consistency!

Now crisp your rotis woth butter on both the sides, on a flat skillet. Remove from heat and spread the thick potato paste all over the roti. Add a good quantity of onion slices, some vinegar soaked chopped green chillies, some grated cheese and a drizzle of coriander chutney and finish it with a sprinkle your Frankie masala n enjoy!
