Green tacos filled with beans sauté, caramelised onions and lots of cheese!
Such a comforting and delicious meal!
Served with sriracha- mayo and cilantro dip, am sure you will make it all the time!

Ingredients
Green tortillas
- 1 cup Half and half all purpose flour and wheat flour
- I/2 cup spinach blanched and puréed
- I tsp Salt
- I tsp sugar
- Milk for kneading a soft dough
For the filling
- Cooked Black beans you can even use canned beans
- 1-2 onions
- 1 medium sized red bell peppers
- 1/4 cup tomato purée
- 3-4 garlic cloves minced
- 1 tsp ginger paste
- Handful of cilantro
- Chilli flakes
- I tsp roasted cumin seed powder
- To tsp turmeric powder
- Sriracha or any hot sauce
- Salt and pepper to taste
- Olive oil for cooking
- Caramelised onions
- 1 cup grated cheddar or any melting cheese
Instructions
- Blanch the spinach in water for 2-3 minutes and purée it in a blender
- Mix it into the flour with all the other ingredients of the tortilla dough and knead to make a soft dough
- Make small balls of the dough and Roll them with a rolling pin
- And cook them on a flat skillet to make tortillas
- Now in a deep skillet on medium flame add 2 tbsps of olive oil
- Add finely chopped onions and minced garlic and sauté them till they begin to sweat
- Add in finely diced red bell peppers
- Cover with a lid and let them cook down for 2-3 minutes
- Add in a the tomato purée
- And the handful of chopped cilantro
- Add in all the other spices, sriracha and salt to taste
- Then add in your cooked black beans
- Sauté them till they all come together!
- For the caramelised onions
- Cut 2 medium sized onions into slices
- Add 2-3 tbsps of olive oil in a heavy bottom pan on medium to low heat
- Sauté them till they get sone colour
- Add in 1 tsp of brown sugar(optional)
- Sauté till they turn golden brown n soft keeping the flame on low!
- This might take upto 10 minutes
- Now on a flat skillet on medium heat place your tortilla
- Add in your beans mixture and caramelised onions on one half
- Top it with a generous amount of grated cheese
- Fold the tortilla and cook on both sides with some olive oil till crispy
- Serve with your fav dips
