Roasted Veggie Pizza minus the base!

Such a delicious way to eat lots and lots of veggies!

Just roast your fav veggies like broccoli, bell peppers, mushrooms, zucchini
Drizzle some marinara sauce
Top it up with Parmesan and any melting cheese
Add another layer of sliced onions and cherry tomato halves
Sprinkle with chilli flakes, herbs and some olive oil and bake again till the cheese is bubbling and crispy at the edges!

Serve like pizzas and enjoyy!

Blissful and healthy for sure!

Roasted veggies pizza

Ingredients
  

  • 1 small zucchini sliced into half moons or quarters
  • 1 bell peppers roughly chopped
  • 3 small crowns broccoli sliced into florets
  • 2 small red onions thinly sliced
  • 8-10 cherry tomato halves
  • olive oil
  • salt and pepper to taste
  • Marinara or pizza sauce
  • 1/4 th cup parmesan cheese grated
  • 1/2 cup shredded mozzarella or any melting cheese
  • 2 tsp Italian seasoning
  • Chilli flakes to taste
  • Garnish: fresh basil + chili pepper flakes

Instructions
 

  • Preheat your oven to 400°F. Spray your large rimmed baking sheet with olive oil. Add your veggies to the sheet
  • Drizzle generously with olive oil and season with salt and pepper to taste. Bake for 20 minutes.
  • After the veggies have roasted for 20 minutes, remove from oven and toss them to mix them
  • Push the veggies together to form an even single layer rectangle.
Drizzle the veggies generously with the marinara sauce
  • Then sprinkle with the parmesan all over
  • Next layer the onion slices and tomato halves
  • And finally cover with mozzarella.
  • Drizzle with some olive oil and pop back into the oven for 18-20 more minutes or till the cheese is bubbling and crispy on the edges 
Top with basil leaves and chili flakes.
