Pesto pasta with pistachios is my version of deliciousness!!
Busting with the basil flavour along with the flavourful Parmesan & olive oil making it so rich & creamy that you are sure to crave for it all the time!!

Who doesn’t like this comforting food that’s so yummy & filling ful of the herbaceous flavour that’s so refreshingly delightful! No wonder my family is always demanding it and we all enjoy it thoroughly!

Ingredients
  

  • 100 gms durum wheat semolina Spaghetti pasta
  • 1/2 cup shelled Pistachios roasted & salted
  • generally pine nuts is the first choice for most but you can make pesto with almonds, walnuts, any nut & we love pistachios & it goes so well with Basil
  • 1/2 cup fresh basil leaves densely packed
  • 1/2 cup High quality Parmesan cheese you can also use any vegan cheese in this recipe
  • 1/3 cup extra virgin cold pressed olive oil
  • 2 small green chillies/ Serrano pepper optional
  • 2-3 cloves med sized garlic
  • Moon dried cherry tomatoes (recipe linked below)
  • Kosher salt
  • Chilli flakes

Instructions
 

  • Just cook the pasta in water with a pinch of salt & 2-3 drops of olive oil.
  • Al Dante or well cooked it’s your choice.
  • Then in a food processor blend together your basil. pistachio, garlic, green chillies, grated Parmesan & olive oil with kosher salt to taste, remember the Parmesan & the nuts both are a little salty
  • (You can even pre prep this pesto and store it in the fridge for a 4-5 days & use it as pizza sause, in sandwiches, as salad dressings, drizzled over bruschetta, tossed with your fav sauté veggies etc etc )
    The good amount olive oil and the Salt preserves the sauce well!
  • I also add a few pumpkin seeds here & it yumm but it’s completely optional!
  • Now mix in this dressing with your cooked spaghetti!
  • Garnish with moon dried cherry tomatoes or you can even use canned sun dried tomatoes
  • Sprinkle some grated Parmesan all over the hot pasta!!
  • Garnish with fresh basil & chilli flakes if you like the heat!
